  • Ingredients:

    • 2 tbsp vegetable oil
    • 1 onion, diced
    • 3 cloves garlic, minced
    • 1 tbsp grated fresh ginger
    • 2 tbsp tomato paste
    • 1 tbsp garam masala
    • 1 tsp ground cumin
    • 1 tsp ground coriander
    • 1/2 tsp cayenne pepper
    • 1/2 tsp salt
    • 2 cans chickpeas, drained and rinsed
    • 1 cup water
    • Fresh cilantro, for serving
  • Instructions:

    1. Heat the oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 5 minutes.
    2. Add the garlic and ginger and cook for another minute.
    3. Add the tomato paste, garam masala, cumin, coriander, cayenne pepper, and salt, and stir to combine.
    4. Add the chickpeas and water and stir to coat everything in the spice mixture.
    5. Bring the mixture to a simmer and cook for 10-15 minutes, until the chickpeas are heated through and the sauce has thickened.
